One of my moves to #EatClean - home-cooked meals. But being lazy, I’d always choose something easy to cook, which in this case, a Prawn Salad.
Forget about dressing the next time you want a prawn salad, try a dip instead!
This is simply a 30min recipe. Simple, Healthy, Delicious!
You will need (serves 2 to 3 pax):
- A food processor OR a blender
- 1kg of Prawns
- 380g of Japan Cucumber
- Hummus Dip
Hummus Dip ingredients:
- 1 can of chickpeas
- 1/4 cup olive oil
- 1 table spoon of lemon juice
- 1 teaspoon of cumin powder
Instructions:
- For Hummus Dip: Blend all the ingredients in a food processor or blender till smooth
- Place it in a bowl to serve.
- Boil the prawns. Drain with cold/ice water. Chill in fridge if needed.
- Cut the cucumber into strips & serve fresh.
Quite a no-brainer, no?
Variations:
- No food processor or blender? No prob, use a mixing bowl & a spoon OR a fork to mix the chickpeas & stuff
- Don’t like cumin, replace with salt & pepper.
- Try hummus with other food as well.
- Google for the traditional Hummus recipe <this is a simplified version> for a more original flavor.
